Thai Chicken

Allergens: gluten, soy

Ingredients (to serve 8 children)


680g chicken breast, diced (or microprotein for veg option)

200g green Thai curry paste

800ml coconut milk

1 tsp fish sauce 

1 tbsp light soy sauce (contains gluten, soya)

440g brown rice

480g green beans or petit pois

240g naan bread (contains gluten)



  1. Cook the chicken in the oil until all sides are sealed and white
  2. Add the curry paste and continue to cook for 1 minute
  3. Add the coconut milk, soy sauce and fish sauce and simmer for 20 minutes
  4. Cook the rice according to packet instructions
  5. Blanch the green beans or petit pois in boiling water for 10 minutes
  6. Heat the naan bread and serve on the side
